Under The Tuscan Chicken

Servings: Dinner for 2-4 (depending on hunger and sides)
Ingredients:
- 6 Bone-In, Skin-On Chicken Breasts
- Meridian Chicken Rub
- 1 tbsp. Sunflower Oil
- 4 Garlic Cloves, minced
- 1/2 White Onion, chopped
- 1 Tomato, chopped
- 4 Cups Spinach
- 2 Cups Whipping Cream
- 1 Cup Parmesean Cheese, grated
- Salt and Pepper
Instructions:
- Season chicken with chicken rub, salt, and pepper
- Heat sunflower oil in a skillet over medium-low heat
- Cook chicken skin-side down until skin becomes browned and crispy (make sure to move the chicken around in the pan to ensure skin doesn't stick to the skillet)
- Once the skin is crispy and brown (about 15 minutes) flip and repeat the process on other side until chicken is completely cooked through
- Remove chicken from pan and allow to rest
- Put onion and garlic into the skillet and cook until onions are clear and garlic is fragrant
- Add tomatoes and spinach and cook until spinach has wilted
- Add whipping cream and season with salt and pepper
- Bring cream to a boil then add parmesan cheese and stir until sauce has thickened
- Return chicken to the pan
- Serve with rice or pasta
