A Little Taste of Italy

It may not be as life-changing as selling your home and moving to the Italian Countryside... but it's pretty darn delicious!

Under The Tuscan Chicken

  • prep time: 20 minutes
  • cook time: 60 minutes
  • total time: 1 hour, 20 minutes

Servings: Dinner for 2-4 (depending on hunger and sides)

Ingredients:

  • 6 Bone-In, Skin-On Chicken Breasts
  • Meridian Chicken Rub
  • 1 tbsp. Sunflower Oil
  • 4 Garlic Cloves, minced
  • 1/2 White Onion, chopped
  • 1 Tomato, chopped
  • 4 Cups Spinach
  • 2 Cups Whipping Cream
  • 1 Cup Parmesean Cheese, grated
  • Salt and Pepper

Instructions:

  1. Season chicken with chicken rub, salt, and pepper
  2. Heat sunflower oil in a skillet over medium-low heat
  3. Cook chicken skin-side down until skin becomes browned and crispy (make sure to move the chicken around in the pan to ensure skin doesn't stick to the skillet)
  4. Once the skin is crispy and brown (about 15 minutes) flip and repeat the process on other side until chicken is completely cooked through
  5. Remove chicken from pan and allow to rest
  6. Put onion and garlic into the skillet and cook until onions are clear and garlic is fragrant
  7. Add tomatoes and spinach and cook until spinach has wilted
  8. Add whipping cream and season with salt and pepper
  9. Bring cream to a boil then add parmesan cheese and stir until sauce has thickened
  10. Return chicken to the pan
  11. Serve with rice or pasta
