My Favourite Roasted Chicken

Perfect Chicken, Every Time

Roasting chicken is one of my favourite things to make! It is the most wonderful comfort food to me. It reminds me of home and you can do anything with the leftovers (sandwiches, soup, chicken melts). So here’s my go-to recipe that I make ALL the time and is so simple even the most rookie of cooks can nail it!

My Favourite Roasting Chicken

  • prep time: 15 minutes
  • cook time: 45 minutes to 1 hour
  • total time: 1 hour +

Servings: Dinner for 4 (depending on the size of the chicken

Ingredients:

  • 1 Fresh Free Run Roasting Chicken
  • Meridian Chicken Rub
  • Olive Oil
  • 1 red onion, sliced into rounds
  • 1 Garlic Bulb
  • 1 Bag of Little Potatoes or fingerling potatoes sliced in half
  • 1 lemon
  • 1 bunch of carrots, sliced
  • Salt and Pepper

Instructions:

  1. Preheat oven to 350F
  2. Toss potatoes and carrots in olive oil, salt, pepper and garlic
  3. Cover the bottom of an oven-safe pan or roasting dish with olive oil
  4. Arrange onions in the middle and then arrange potatoes around the outside of the dish
  5. Place carrots in the pan as well
  6. Rinse chicken with water and pat dry with a paper towel (make sure it is really dry (this ensures a nice crispy skin)
  7. Mix chicken rub and olive oil
  8. Brush chicken rub mixture (generously) all over the roasting chicken
  9. Place chicken breast-side up into the roasting pan (on top of the onions)
  10. Slice the lemon and stuff the chicken with lemon and the garlic
  11. Any pieces of lemon that don't fit inside the cavity can be placed on top of the vegetables
  12. Optional - tie legs with butcher twine
  13. Roast for 40 minutes to an hour until a meat thermometer reaches 165F in the breast
  14. I like to increase the temperature of the oven to 400 degrees C for the last 20-30 minutes of cooking to get a nice crispy skin!
