Lemon Ricotta Broccoli Fusilli with Crispy Chicken

It’s like mac & cheese… but for fancy grown-ups ;)

Instructions:

Bake chicken schnitzel as per package instructions Boil a large pot of salted water to a boil over medium-high heat Add pasta and cook until al dente Zest and juice the lemon and mix with all cheeses (I did this by using my blender so it became well mixed and fluffy) Season with salt & pepper and red chili flakes Once pasta is almost cooked (al dente) add broccoli florets and cook until broccoli is cooked Drain pasta & broccoli reserving 1 cup of pasta water Add cheese mixture and reserved pasta water (slowly) until desired thickness of the sauce is reached (sauce should coat the pasta and become a nice sauce consistency) Taste and season with more parmesan cheese, salt, and pepper as needed Serve with sliced chicken schnitzel
