Creamy Garlic Spinach Chicken

Often how my recipe development starts is I’ll have an ingredient in my fridge that is about to go bad and so I experiment different ways to cook that item to make sure it doesn’t go to waste. Often that ingredient is spinach. I always buy spinach with hopes that it’s going to go in a smoothie or I’m going to eat a salad for lunch and that never happens and normally I end up using it in a pasta, but instead I came up with this quick dish ready in under a half an hour. It’s full of flavour and is great to be served with any leftover roasted vegetables, rice or noodles!
Creamy Garlic Spinach Chicken

- Cook Time: 20 minutes
- Total Time: about a half-hour
*Servings: 4
Ingredients:
- 4 Boneless, skinless chicken breasts
- 1 onion, diced
- 2 garlic cloves, minced
- 4 big handfuls of spinach
- 1 cup heavy cream
- Juice of 1 lemon
- 1 cup parmesan cheese, grated
- salt & pepper
- Olive oil
Instructions
- Pound out chicken breasts on a cutting board with a meat mallet or a rolling pin until they are similar thickness throughout
- Heavily season chicken breasts with salt and pepper
- Add olive oil to a large skillet and once heated, add chicken breasts
- Brown chicken breasts until browned on each side (about 5 minutes per side), until chicken is fully cooked through
- Remove chicken from heat and set aside
- Add onions and garlic to the skillet and saute until onions are translucent and garlic is fragrant
- Add spinach and cook until it has completely wilted
- Add the cream and lemon juice and simmer until it has begun to thicken
- Taste and season with salt and pepper, to taste
- Add chicken breasts back to the pan and top with parmesan cheese, mixing until well coated
- Allow mixture to simmer for a few minutes and continuously coat chicken with the creamy spinach mixture
- Serve with rice, noodles or vegetables
