Honey BBQ Ribs, Homemade Cornbread & SuperSlaw

Honey BBQ Ribs
Ingredients:
- 2 racks of pork ribs
- 2 Tbsp. Brown Sugar
- 2 Tbsp. Paprika
- 1 cup BBQ Sauce
- 1/4 Cup Honey
- Salt and pepper
Instructions
- Preheat oven to 250F
- Mix brown sugar, paprika, salt, and pepper
- Rub the rub all over the racks of ribs
- Cover the ribs with aluminum foil and bake in the oven for 2 hours
- When 2 hours has been reached, remove ribs from the oven
- Increase oven to 350F and remove foil from ribs
- Mix the BBQ Sauce and honey and coat the ribs (the saucier, the better)
- Put ribs back in the oven and cook for 10-20 minutes until Honey BBQ is warm and ribs are cooked through
Homemade Cornbread
Ingredients
- 1 Cup Cornmeal
- 1 Cup All-Purpose Flour
- 1/4 Cup Sugar
- 1 Cup Milk
- 1 Egg
- 1/4 Cup Canola Oil
- 4 tsp. Baking Powder
- Butter
- pinch of salt
Instructions
- Preheat oven to 425F
- Coat a baking pan with butter
- In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt
- In another bowl, beat then egg and then mix in the milk and oil
- Add wet ingredients into the bowl of dry ingredients and stir until everything is combined (don't overmix)
- Pour mixture into the baking pan and bake until a toothpick inserted into the center comes out clean and edges are golden brown (about 20 minutes)
SuperSlaw
Ingredients
- 1 package of coleslaw salad mix (chopped purple and green cabbage and carrots)
- 1/2 cup Mayonnaise
- 1 tbsp. White Vinegar
- 1/2 tbsp. Apple Cider Vinegar
- 1 tbsp. Dijon Mustard
- 1/2 tsp. sugar
- Salt and pepper
Instructions
- Mix the Mayonnaise, vinegars, mustard, sugar, salt, and pepper
- Coat the package of coleslaw mix with the dressing
- Refrigerate until ready to serve (the longer, the better - up to 24 hours)
