Instant Pot Pulled Pork Sandwiches

Ingredients:
- Approx 3 lbs. boneless pork loin roast
- 2 tbps. brown sugar
- 2 garlic cloves, minced
- 1 shallot, minced
- 2 tsp. cumin
- 1/2 tsp. cayenne pepper
- Olive oil
- 1/3 cup Apple cider vinegar
- BBQ Sauce
- 1 1/4 cup beef broth
- Salt and pepper
- Buns
- Mayonnaise
- Dijon Mustard
- Coleslaw
Instructions
- In a large, shallow bowl, combine the brown sugar, garlic, shallot, cumin, cayenne and season with salt and pepper
- Cut the pork loin into quarters
- Coat each quarter of pork loin in the brown sugar seasoning
- Turn the instant pot to the saute setting and add olive oil and allow to heat up
- Add the pork to the instant pot working in batches to saute on all sides until browned
- Repeat with remaining pork, then turn off the instant pot
- Whisk together the apple cider vinegar, one cup of broth, and one cup of BBQ Sauce
- Use the rest of the broth to deglaze the bottom of the instant pot
- Add pork and bbq sauce mixture to the instant pot
- Close the lid and pressure cook for 40 minutes
- After cooking time is done, and the pressure has been released, use two forks to shred the meat
- Add more bbq sauce to desired "sauciness."
- Toast buns in the oven
- Coat buns in dijon mustard and mayonnaise, add pulled pork, then coleslaw, and serve!
