Homemade Rosemary Thyme Focaccia

  • Prep Time: 1.5 hours
  • Cook Time: 20-25 minutes
  • Total Time: Around 2 hours (including resting time)
  • Servings: 4-8

Ingredients:

  • 2 1/2 tsp. dry active yeast
  • 1/2 cup olive oil
  • 2 garlic cloves, minced
  • 1 tbsp. thyme, chopped
  • 1 tbsp. rosemary, chopped
  • 1 cup warm water
  • 1/4 tsp. honey
  • 2 1/2 cups + flour
  • Salt & pepper

Instructions

  1. In a skillet or frying pan, add olive oil, thyme, rosemary, garlic, salt and pepper
  2. Heat stirring until garlic is fragrant
  3. In a bowl, mix the yeast honey and warm and allow to sit for between 5 and 10 minutes
  4. Add 1 cup of flour and spoonfuls of the herb olive oil and mix until well combined then allow to sit for another 5 -10 minutes
  5. Stir in the rest of the flour
  6. Once the dough is mixed transfer to a floured surface and knead until smooth
  7. Coat a bowl with olive oil and place the bread into the bowl
  8. Cover with a warm, damp towel and allow to rise (about 1 hour)
  9. Coat the bottom of a ribbed baking sheet with the herbed olive oil (I don't have one so I used a shallow casserole dish)
  10. Place dough into the pan and dimple the dough with your fingers
  11. Top with the remaining herbed olive oil mixture
  12. Allow rising for another 20 minutes
  13. Bake at 450F for 15-20 mins until browned
  14. Cool on a baking rack for 10-15 minutes
