Homemade Rosemary Thyme Focaccia
Homemade Rosemary Thyme Focaccia

Ingredients:
- 2 1/2 tsp. dry active yeast
- 1/2 cup olive oil
- 2 garlic cloves, minced
- 1 tbsp. thyme, chopped
- 1 tbsp. rosemary, chopped
- 1 cup warm water
- 1/4 tsp. honey
- 2 1/2 cups + flour
- Salt & pepper
Instructions
- In a skillet or frying pan, add olive oil, thyme, rosemary, garlic, salt and pepper
- Heat stirring until garlic is fragrant
- In a bowl, mix the yeast honey and warm and allow to sit for between 5 and 10 minutes
- Add 1 cup of flour and spoonfuls of the herb olive oil and mix until well combined then allow to sit for another 5 -10 minutes
- Stir in the rest of the flour
- Once the dough is mixed transfer to a floured surface and knead until smooth
- Coat a bowl with olive oil and place the bread into the bowl
- Cover with a warm, damp towel and allow to rise (about 1 hour)
- Coat the bottom of a ribbed baking sheet with the herbed olive oil (I don't have one so I used a shallow casserole dish)
- Place dough into the pan and dimple the dough with your fingers
- Top with the remaining herbed olive oil mixture
- Allow rising for another 20 minutes
- Bake at 450F for 15-20 mins until browned
- Cool on a baking rack for 10-15 minutes
