The Easiest & Most Delicious Date Night In!

It’s Friday night, the toddler’s in bed and mom & dad want to have a nice date night… but because of Covid, staying home is our only option. Enter our favourite impromptu date night dinner!

Steak, Asparagus & Hasselback Potatoes

  • Cook Time: 1 hour
  • Total Time: approx ~ 1 hour 20 minutes

Ingredients:

  • 2 Free Range Rib Eye Steaks
  • 2 Tbsp. Grapeseed Oil
  • Meridian House Seasoning
  • 1 bunch fresh asparagus
  • 6 garlic cloves, minced, divided
  • 3 tbsp. freshly grated parmesan cheese
  • Olive Oil
  • 4 Yellow Potatoes
  • 1/2 Cup Butter
  • 1 cup Gouda Cheese, shredded
  • 1/2 Cup Parmesan Cheesem Shredded
  • 1/4 Cup Parsley, Chopped
  • Salt and pepper
  • Potato garnishes: Sour cream, shredded cheese, chives, bacon bits* optional

    Instructions

  • Pull steaks from the fridge and pat dry
  • Allow steaks to sit at room temperature for 45 minutes
  • preheat oven to 400F
  • Wash potatoes and pat dry
  • Make slices into the potatoes (accordion style) ensure not to cut all the way through
  • Mix melted butter, olive oil, and minced garlic
  • Brush garlic butter on top of potatoes and season with salt and pepper (reserving half)
  • Place potatoes on a parchment-lined baking sheet and bake for 20 minutes (until slits begin to open and potatoes begin to turn golden
  • Coat potatoes with the remaining garlic butter mixture and top with shredded parmesan and gouda cheese
  • Bake for an additional 20-30 minutes until potatoes are fork-tender
  • Garnish with parsley and optional potato toppings
  • Generously season the steak with Meridian House Seasoning
  • Heat grill to high heat (if you would prefer to pan-sear your steaks, click here for my pan-seared steak recipe)
  • Place steaks on the BBQ and grill for approximately 6 minutes per side (or until the desired doneness)
  • Once steaks are cooked, remove from BBQ and place on a cutting board or plate and allow to rest for 7-10 minutes before serving (this will allow the steaks to rest so that juices don't pool out of the steaks onto your serving plate)
  • Line a baking sheet or baking dish with parchment paper
  • Rinse asparagus and trim ends
  • Spread asparagus in a single layer on the prepared baking dish
  • Toss asparagus in olive oil until well coated (so that it doesn't stick to the parchment paper)
  • Season with minced garlic (3 cloves), salt, and pepper
  • Top with grated parmesan cheese
  • Bake for 8-10 minutes at 425F until asparagus is still slightly firm yet fork tender
