The perfect way to celebrate Taco Tuesday without those pesky shell calories (just kidding, I didn’t have any taco shells on hand so I improvised and I was pleasantly surprised!)

Fish Taco Bowls With Cilantro Lime Dressing

  • total time: Around half hour

Servings: about 2

Ingredients:

  • 2 Everything Bagel Cod Fillets
  • 2 cup brown rice, cooked
  • 1 lime
  • Red cabbage, shredded
  • 1 avocado, sliced
  • 1 cup cilantro, sliced
  • 1/2 cup plain Greek Yogurt
  • 2 garlic cloves, minced
  • 1/4 cup olive oil
  • Salt & Pepper

Instructions

  1. In a mixing bowl mix the Greek yogurt, cilantro, juice from 1 lime, olive oil, salt and pepper
  2. Divide rice into bowls and top with shredded cabbage, lime slices and everything bagel cod fillets
  3. Drizzle with cilantro lime dressing
