Sundried Tomato Beef Shells

Servings: about 4 (depending on serving portions)
Ingredients:
- 1 package of beef shells
- 1 lb. free-range ground beef
- olive oil
- 1/2 onion, minced
- Italian seasoning
- 2 garlic cloves, minced
- Italian seasoning
- 2 cups crushed tomatoes
- 1 cup tomato paste
- Sundried tomatoes, chopped
- Salt & pepper
- Parmesan cheese
Instructions:
- Season a large pot of water with salt and cook noodles until al dente, then drain and add back to the pot (reserving 1 cup of pasta water)
- Heat olive oil in a large skillet and then add diced onions, and ground beef seasoning with Italian seasoning, garlic, salt, and pepper
- Crumble beef and cook until no longer pink
- Add tomato sauce, tomato paste, and sundried tomatoes and stir well
- Bring to a boil and then reduce until flavors are well blended
- Add pasta to a baking dish and top with tomato sauce
- Top with grated parmesan cheese and bake until cheese has melted
