Halibut Fillet Burgers

Cravin' some fish 'n chips? This ain't no filet-o-fish! I LOVE halibut fillet burgers and when they served with fresh homemade coleslaw, tartar sauce, and a toasted bun... they can't be beaten. Move over beef burgers... This one's just for the halibut!
Halibut Fillet Burgers with Homemade Slaw

Cook time 20 minutes
Ingredients:
- 4 halibut fillet burger patties (you could also use cod burgers)
- 4 Burger buns
- Tomato, cut into slices
- Tartar Sauce
- Ketchup
- Red Onion, cut into slices
- Cheddar cheese, sliced
- 1 small cabbage, shredded
- 2 carrots, peeled & shredded
- 1/2 cup mayonnaise
- 2 tbsp. dijon mustard
- 2 tbsp. white vinegar
- 2 tbsp. sugar
- Juice from 1 lemon
- Salt & pepper
Instructions
- Preheat oven to 450F
- Place halibut burgers on a parchment-lined baking sheet and bake for 20-25 minutes, flipping halfway. (This is using Meridian's Halibut Fillet Burgers, other burgers may take longer or shorter depending on their thickness)
- The last-minute or so of cooking, toss a slice of cheddar cheese on each burger until melted
- While burgers are cooking, make the coleslaw dressing by mixing the mayonnaise, mustard, vinegar, sugar, lemon juice, and salt and pepper
- Place shredded cabbage and carrots in a bowl and toss in the coleslaw dressing
- Butter burger buns and place under the broiler (watching carefully to ensure they don't burn) for 1-2 minutes until toasted
- On the top side of the buns spread ketchup and on the bottom side spread a generous amount of tartar sauce
- Layer the burger on top of the tartar sauce and top with homemade coleslaw, tomato, and red onion
- Serve with fresh chips (fries)!
