The sauce is made with broccoli so it has to be healthy right?

Broccoli Turey Pesto Paccheri

Servings: 4

Ingredients:

  • 400g paccheri pasta noodles
  • 1 broccoli crown
  • olive oil
  • 2 garlic cloves, minced
  • 1 lemon, juiced
  • 1 lb. lean ground turkey
  • 3 tbsp. pine nuts
  • 1 cup heavy cream
  • parmesan cheese
  • salt & pepper

Instructions

  1. Boil noodles in a heavily salted pot of water
  2. In another pot boil broccoli in heavily salted water
  3. Drain the broccoli and add to a blender
  4. In a blender, mix the broccoli, garlic, olive oil, lemon juice, and pine nuts until well mixed
  5. Season ground turkey with salt and pepper and cook in an oiled saucepan
  6. Once the turkey is cooked add heavy cream and parmesan cheese until the cream has thickened and cheese has melted
  7. Drain cooked noodles (reserving 1 cup of water) and then return to the pot
  8. Add broccoli pesto and ground turkey mixture to the pot and toss until well coated
  9. If your sauce is not "saucy" enough add reserved pasta water and cheese until desired texture is reached
  10. Top with parmesan cheese and sundried tomatoes and serve
