Broccoli Turey Pesto Paccheri

Ingredients:
- 400g paccheri pasta noodles
- 1 broccoli crown
- olive oil
- 2 garlic cloves, minced
- 1 lemon, juiced
- 1 lb. lean ground turkey
- 3 tbsp. pine nuts
- 1 cup heavy cream
- parmesan cheese
- salt & pepper
Instructions
- Boil noodles in a heavily salted pot of water
- In another pot boil broccoli in heavily salted water
- Drain the broccoli and add to a blender
- In a blender, mix the broccoli, garlic, olive oil, lemon juice, and pine nuts until well mixed
- Season ground turkey with salt and pepper and cook in an oiled saucepan
- Once the turkey is cooked add heavy cream and parmesan cheese until the cream has thickened and cheese has melted
- Drain cooked noodles (reserving 1 cup of water) and then return to the pot
- Add broccoli pesto and ground turkey mixture to the pot and toss until well coated
- If your sauce is not "saucy" enough add reserved pasta water and cheese until desired texture is reached
- Top with parmesan cheese and sundried tomatoes and serve
