Dreaming of a Venitian Spring

A Simple Lunch

This year, it seems as though we will not be spending our Spring wandering along the canals of Venice… but that doesn’t mean I can’t enjoy one of my favourite sandwiches from one of my favourite vacations.

Venitian Spring Sandwich

  • prep time: 5-10 Minutes
  • cook time: 0
  • total time: 10 minutes or so

Servings: 2-4

Ingredients:

  • 1 french baguette, sliced in half and then cut into 1/4 -1/3rds depending on the size you want your sandwich
  • proscutitto, sliced
  • Creamy brie cheese, sliced
  • 4 Tbsp. Mayonnaise
  • 4 Tbsp. Butter
  • Chives, sliced
  • 2 tbsp. grainy mustard
  • 1 garlic clove, minced
  • juice of 1 lemon
  • arugula
  • salt & pepper

Instructions

  1. In a mixing bowl, combine mayonnaise, chive, grainy mustard, garlic, lemon and salt, and pepper
  2. Heavily spread the mayonnaise mixture on the bottom side of the baguette
  3. Coat the inside of the top of the baguette with butter
  4. Place prosciutto on the bottom of the bread and top with chunks of brie cheese and arugula
  5. Top with the other half of the baguette
  6. Serve with a nice glass of white wine or prosecco!
