With Dill Mayo and Chives

Whether you’re eating burgers and dogs from the grill or fried chicken hot from the stove, this homemade side dish is Dill-Ish!

Warba Potato Salad with Dill Mayo and Chives

  • prep time: 5 minutes
  • cook time: approx 30 minutes
  • Total time: approx 35 minutes

Servings: Side dish for 4-6

Ingredients:

  • 2 lbs. Warba potatoes
  • Olive Oil
  • 2 garlic cloves, minced
  • 1/2 cup mayonnaise
  • Juice of 1 lemon
  • Fresh dill, finely chopped
  • Fresh chives, finely chopped
  • 1 shallot, thinly diced
  • Salt & pepper

Instructions:

  1. Preheat oven to 400 degrees F
  2. Cut the potatoes into quarters
  3. Place potatoes in a bowl and coat with olive oil, lemon juice, then season with salt and pepper
  4. Line a baking sheet with parchment paper and lay potatoes in a single layer
  5. Bake potatoes for 25-30 minutes until they are fork-tender
  6. Once potatoes have cooked, allow them to cool down for a few minutes
  7. Mix the mayonnaise, minced garlic, shallots, and fresh dill
  8. Season with salt and pepper to taste
  9. Add potatoes to a bowl and coat and top with the dill mayonnaise
  10. Garnish with fresh chives
