Warba Potato Salad

Warba Potato Salad with Dill Mayo and Chives
- prep time: 5 minutes
- cook time: approx 30 minutes
- Total time: approx 35 minutes
Servings: Side dish for 4-6
Ingredients:
- 2 lbs. Warba potatoes
- Olive Oil
- 2 garlic cloves, minced
- 1/2 cup mayonnaise
- Juice of 1 lemon
- Fresh dill, finely chopped
- Fresh chives, finely chopped
- 1 shallot, thinly diced
- Salt & pepper
Instructions:
- Preheat oven to 400 degrees F
- Cut the potatoes into quarters
- Place potatoes in a bowl and coat with olive oil, lemon juice, then season with salt and pepper
- Line a baking sheet with parchment paper and lay potatoes in a single layer
- Bake potatoes for 25-30 minutes until they are fork-tender
- Once potatoes have cooked, allow them to cool down for a few minutes
- Mix the mayonnaise, minced garlic, shallots, and fresh dill
- Season with salt and pepper to taste
- Add potatoes to a bowl and coat and top with the dill mayonnaise
- Garnish with fresh chives
