What’s Not To Love?

I LOVE a great comfort food meal and what’s more comforting than mac ‘n cheese? Well not much else but… as always I wanted to #ElevateHomemade so I made GOAT CHEESE Mac! (don’t worry there’s some mozza in there too - I’m not crazy)!

Grown-Up Goat Cheese Mac

  • cook time: 15 minutes
  • total time: Around half hour

Servings: about 4 (depending on serving portions)

Ingredients:

  • 1 package of noodles (whatever you have on hand I used penne this time but you could use macaroni, fusilli, or anything else you have on hand)
  • 300g Soft goat cheese
  • 2 garlic cloves, minced
  • 2 cups mozzarella cheese, shredded
  • Parmesan Cheese, shredded
  • 1/4 cup butter
  • 2 tbsp. flour
  • 1 1/2 cup heavy cream
  • Italian seasoning
  • Salt & Pepper
  • optional - leftover protein - I had leftover rotissere chicken from the night before so I shredded it and added it into the pot after I added the sauce

    Instructions:

  • Preheat oven to 350 degrees
  • Season a large pot of water with salt and cook noodles until al dente, then drain and add back to the pot (reserving 1 cup of pasta water)
  • Melt half of the butter in a saucepan and add garlic
  • Gradually add the flour and whisk until it forms a roux
  • Slowly pour in the milk and whisk until well combined and no lumps remain
  • Add the goat cheese, mozzarella, and Italian seasoning and whisk until cheese has melted
  • Taste the sauce and decide if you need to add more Italian seasoning and then season with salt and pepper
  • If your sauce is too thick, you can add some of the reserved pasta water, if it is too thin, you can always add more cheese ;)
  • Pour the sauce on top of the cooked pasta noodles and coat well
  • Pour the sauced pasta into a baking dish and coat with shredded parmesan cheese
  • Bake at 350 for a few minutes until the cheese melts
  • optional broil for 1-2 minutes to brown the cheese
