A Sure Way to Be Mom’s Favourite

Mother’s Day is so important (I know cause I’m a mom)! Mom deserves to be spoiled and we all love something homemade, delicious, and a little decadent. The best part about this brunch board is that it not only does it look amazing, but it is not hard to do… plus you can prep a lot ahead of time. Can’t see mom cause of social distancing? This would be a great treat to do a no-contact drop off!

Mother's Day Brunch Board

  • prep time: 40 Mins
  • cook time: 30 mins to an hour
  • Total time: ~ 1 - 1.5 hours

Servings: Depending on portions purchased

A little bit further down, I'll add the recipes for the tomato mozzarella spinach egg muffins and the sweet waffle syrup, but first I'll just explain how to put together a brunch board (as you have some choices). I have some suggested ingredients below, but you can change these to things that you know mom loves (change out the fruit or cheese, etc.)

Ingredients:

  • 1 lb. Meridian Double Smoked Bacon
  • 1 lb. Meridian Maple Blueberry Sausages
  • 100g Proscuitto
  • Cooked waffles or pancakes (you could even use scones or croissants)
  • Sweet Waffle Sauce (recipe below)
  • Egg Bites (recipe below) (or scambled eggs)
  • Brie Cheese (or mom's favourite)
  • Yogurt
  • Granola
  • Grapes
  • Kiwis
  • Chocolate Chips
  • Strawberries
  • Bananas
  • Blueberries

Preparation Instructions:

First, you will want to make all of your items that need to be cooked. If you are doing the full mom board then you are going to want to follow this order;

  1. Make the egg bites (recipe below)
  2. Make the bacon and sausages
  3. Make the waffle sauce (recipe below)
  4. Make the waffles
  5. Cut all fruit in the way you want them displayed. I left the strawberries, blueberries and grapes whole, and then just sliced the bananas and cut the kiwis into flowering shapes

Assembly Instructions:

This is the part where all the "art" comes into play. Here is the order I go in to ensure I get a well-balanced board:

  1. Place anything round or in a container. For me, this was the granola, yogurt, waffle sauce, chocolate chips, and brie cheese
  2. Place your "bigger items" for me this was the waffles
  3. Place your next items that are less "moldable" for me this was the sausages, bacon and egg bites. I find that building up adds a lot of texture and depth to your boards. So try to think height when placing items.
  4. Next, fill your holes or gaps with flexible items. For me, this was the prosciutto
  5. Next place all of your fruit to add beauty and color to your board. You will want to fill up all the gaps with your fruit. The fruit is the one item I would say it's okay to spread out along your board for color. What I mean by this is that I wouldn't put the bacon in two different spots, but I did separate the kiwis and the strawberries

Mozarella Tomato Spinach Egg Bites

  • prep time: 5-10 Mins
  • cook time: 20-25 mins to an hour
  • Total time: ~ 30 mins

Ingredients

  • 8 Fresh Free Range Eggs
  • 1/4 cup milk
  • 1 garlic clove, minced
  • 3/4 cup spinach, chopped
  • 3/4 cup tomatoes, chopped
  • 3/4 cup mozzarella cheese, shredded
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 350F
  2. In a mixing bowl, combine the eggs, milk, and garlic and mix to combine well
  3. Gently mix in the spinach, tomatoes, and mozzarella and season with salt and pepper
  4. Generously spray a muffin tin with non-stick cooking spray
  5. Fill each muffin tin 2/3 full of the egg mixture
  6. Bake for 20-25 minutes until eggs are fully cooked

Sweet Waffle Sauce (also great on pancakes, french toast & crepes)

  • prep time: 2 Mins
  • cook time: 10 - 15 minutes
  • Total time: ~ 20 mins

Ingredients

  • 2 cups milk
  • 1/4 cup all-purpose flour
  • 3/4 cup sugar
  • 2 tbsp. butter
  • 1 tsp. vanilla
  • dash of nutmeg

Instructions

  1. In a saucepan mix together the flour and sugar
  2. Once flour and sugar are well mixed add the milk (whisking well) and place on stove on medium heat
  3. Stir sauce consistently as it cooks
  4. Cook sauce until it begins to boil and has thickened
  5. Once the sauce has thickened, remove from heat and add the butter and vanilla, mixing well
  6. Season with a dash of nutmeg on top
