What To Do With All That Food

A quick and easy meal for all your leftovers!

The Most Delicious Way To Clean Your Fridge & Reduce Food Waste

Servings: Depending on leftovers

If you're anything like me, then at the end of the week (or the start of the next week), you've got a fridge full of leftovers bits and pieces of meals but not enough for a full meal. That's where my "Clean The Fridge Bowl" comes from! This is a typical lunch in my house as I need to whip up something fast while the baby naps and there's laundry on the go, but I get tired of sandwiches.

So it's pretty simple and a great way to not have food waste (which I hate)

Instructions:

  1. Pick your base! I try to pick an item I have the most of. Typically it's either rice, risotto, pasta, or leafy green
  2. Then I top that base with any leftover vegetables I have in my fridge. On this particular day, I had roasted sweet potatoes, something I have often as Linden LOVES sweet potatoes. But you can add any cooked (or raw sliced) vegetables that you have in the fridge. On this date, I had leftover radishes and spinach so I added those.
  3. Next, you'll add a protein. I pretty much always have some type of leftover protein in our fridge either chicken, salmon, pork, or beef, but if you don't have one, you can add a sliced hardboiled egg.
  4. Top with any additional garnishes. Sometimes I'll have a bit of feta cheese or goat cheese leftover but not enough for a full family salad so I'll add that.
  5. Lastly, I'll add a sauce cause I LOVE sauce. Sometimes it's a bottled salad dressing or sauce I already have in the fridge but MOST times it's my homemade peanut sauce. And it's so simple!
  6. Mix a couple of tablespoons of peanut butter in a bowl with soy sauce, honey, and salt and pepper. Voila!
  7. The best part is since everything is leftovers, items are already cooked so you can eat it cold and enjoy some Netflix!
