Lazy Lasagna Rolls

Lazy Lasagna Rolls
- prep time: 10 mins
- cook time: approx 30-40 minutes
Servings: 4 for dinner
INGREDIENTS:
- 12 lasagna noodles
- Olive oil
- 10 oz. baby spinach
- 2 cups ricotta cheese
- 1 large egg
- 1 cup parmesan, grated
- 2 cups pasta sauce (any red sauce will do, I've used marinara, meat sauce, and tomato basil)
- 2 cups mozzarella
- Salt & pepper
INSTRUCTIONS
- Boil lasagna noodles in salted water until they have softened and are easy to work with
- Once lasagna noodles are cooked place them on plates without touching as they often stick together (therefore I normally cook a few extra noodles than what I need cause a few rip or get stuck)
- In a mixing bowl, combine ricotta cheese, egg, 1/2 of the parmesan,1/2 of the mozzarella, and salt and pepper
- Spread ricotta mixture onto the bottom of each lasagna noodle
- Add spinach and roll up tightly
- Spread pasta sauce (generously) on the bottom of a baking dish
- Place the lasagna rolls into the baking dish and top with more sauce and the remaining mozzarella and parmesan cheese
- Bake at 350F until cheese begins to bubble (approx 20-30 minutes)
