Ahi Tuna Poke Bowl

Homemade (kinda).

Okay, so I'm TOTALLY on the poke bowl trend. I think I could live solely on sushi and poke bowls and I've tried making sushi and I've always found it to be more expensive to make and never tastes as good... poke bowls on the other hand... they are delicious and easy to make (with a cheating ingredient... shhh).

Homemade (kinda) Ahi Tuna Poke Bowls

  • Prep time: 20 minutes
  • Cook time: 5 minutes
  • Total time: 15 minutes

Servings: Dinner for 2

Ingredients:

  • 1 Annasea Authentic Hawaiian Poke Soyu Ahi
  • 2 Cups Cooked Rice
  • 1 Cup White Vinegar
  • 1 cup water
  • 1 Tbsp. Sugar
  • 1 tsp. Salt
  • 1 Cucumber, sliced
  • 1 Red Onion, sliced
  • 1 Ripe Mango, Sliced
  • 1 Ripe Avocado, Sliced
  • Green Onions, Sliced
  • 1 Jalapeno, seeded and sliced
  • Soy Sauce

Instructions:

  1. In a saucepan over medium-high heat bring vinegar, water, salt and sugar to a boil stirring until sugar dissolves
  2. Place onion and cucumber slices in a heatproof bowl and pour the vinegar mixture on top. This is better if you do it the day before and keep in your fridge. They will last quite a while in the fridge
  3. Open poke kit and mix all ingredients together
  4. Place cooked rice in a bowl and top with pickled cucumber, pickled onion, mango, avocado and poke.
  5. Garnish with chives and jalapenos.
  6. Drizzle with additional soy sauce if desired
