California Cauliflower Crab Bowl

It’s like a California Roll, in a bowl… kinda!
Okay, the intention here was I was going to make a “California Roll” style sushi bowl, but I didn’t have any Nori, and I didn’t have crab meat… and I didn’t want all the calories of rice… so instead, I made this, and guess what? It was DELISH!
California Cauliflower Crab Bowl

- cook time: 15 minutes
- total time: ~25 minutes
Servings: Dinner for 2-4 depending on appetite
Ingredients:
- 4 Meridian Crab Cakes
- 1 Head of cauliflower
- 1 Cucumber, sliced
- Edamame Beans, cooked
- 1 bunch of spinach
- Ginger
- Soy Sauce
- Avocado, sliced
- Green Onions, sliced
- Mayonnaise
- Sriracha
- Olive Oil
- Salt and pepper
Instructions:
- Mix Sriracha and Mayonnaise together until the desired level of spice is reached
- Cut cauliflower into chunks and grate with a box grater into small pieces (the size of rice)
- Place grated cauliflower into a paper towel to remove moisture
- Heat olive oil in a large skillet over medium heat and add grated cauliflower to the pan and saute
- Cover pan with a lid and steam until desired texture is reached
- Season cauliflower "rice" with soy sauce, salt, and pepper
- Place frying pan on the stove over medium heat and add crab cakes
- Fry each side for 2-4 minutes until crab cakes are browned and cooked through completely (there are no cold spots)
- Place spinach in a bowl and top with cauliflower "rice", cucumber, edamame beans, ginger, avocado, green onions, crumbled crab cakes and Sriracha-Mayo
