Mussels in White Wine Shallot Sauce

Ingredients:
- 300g mussels
- 1 cup white wine
- 1 shallot, diced
- 2 garlic clove, minced
- 1/2 cup cream
- Olive Oil
- Salt & Pepper
Instructions
- Coat the bottom of a pan with olive oil and heat until shimmering
- Add shallots and garlic and cook until garlic is fragrant and shallots are translucent (about 3 minutes)
- Add white wine and bring to a boil
- Reduce the heat and add mussels and covering, cooking for 5-7 minutes until mussels are opened
- Once mussels are cooked (they have opened), add cream and stir to combine
- Serve with crusty bread for dipping
