To Feed A Crowd - Easily

Seafood Broil

One pan, seafood-y and a tad spicy! Your guests are sure to be ranting and raving about this meal!

Seafood Broil

  • prep time: 15 minutes
  • cook time: 25 minutes
  • total time: ~1 hour

Servings: Dinner for 4-6

Ingredients:

  • You can use any seafood you like. In the past, I have used prawns and crab legs but you can also use lobster, scallops, or mussels
  • 1 lb. Boomer Gold potatoes (but any little potatoes will do
  • 4 ears of corn, cut into rounds (this is hard I have Kevin do it for me every time)
  • 2 lemons halved
  • 2 lemons, wedges for serving
  • 4 garlic cloves, minced
  • 1/2 cup Old Bay Seasoning
  • 4 tbsp. butter
  • 1 lb. chorizo sausage
  • Salt & pepper

Instructions:

  1. Preheat oven to 400F
  2. Prepare a baking sheet with parchment paper and spray with non-stick spray
  3. Panfry chorizo sausage until it is almost completely cooked through 8-10 minutes
  4. Boil potatoes in salted water until parboiled (about 10-15 minutes)
  5. With 5 minutes to go on the potatoes, add the corn
  6. Drain corn and potatoes and cut potatoes in half
  7. In a bowl, combine butter, garlic and Old Bay Seasoning
  8. Lay potatoes, corn, seafood and sausage in a single layer onto the baking sheet
  9. Pour butter mixture on top of the seafood mixture and stir to combine (At this point I often decide if I want to make more of the butter mixture if I think that all the items are not coated enough)
  10. Bake for 10-15 minutes until the seafood and sausage is completely cooked through and corn and potatoes are tender
  11. Season with salt and pepper
  12. Serve with lemon wedges and bread for dipping
