Pork Roast with Whiskey Peach Sauce & Roast Vegetables

Ingredients:
- Pork Loin Roast (about 3 lbs.)
- Pork Rub
- 1 zucchini, cut into slices
- 1 turnip, cut into slices
- 1 eggplant, cut into slices
- 1 celery stock, cut into slices
- 1/2 white onion, diced
- 1 garlic clove, minced
- Italian Seasoning
- 2 peaches, peeled, pitted, and sliced
- 1 oz. Whiskey
- 1 tbsp. Apple Cider Vinegar
- 1 tbsp. Honey
- 2 tbsp. Butter
- Olive Oil
- Salt & Pepper
Instructions
- Coat pork roast in olive oil and then generously season with Pork Rub
- Heat oil in a large skillet until shimmering
- Add pork roast and sear each side until browned
- Coat sliced vegetables in olive oil, garlic, and Italian Seasoning
- Place vegetables on the bottom of a roasting pan and add pork on top
- Roast at 375F for 1 -1.5 hours until internal temperature reaches a minimum of 145F
- When pork resting, make the whiskey peach sauce
- Add peach slices to the skillet and stir until browned
- Add whiskey, apple cider vinegar, and honey stirring until it has thickened
- Remove from the heat and stir in the butter
- Slice pork and top with whiskey peach sauce and serve with a side of roasted vegetables
